DRY-AGED: 21 - 42 DAYS

Dry-Aging further enhances flavor and tenderness. The Walhalla Valley Smokehouse & Market enable us to dry-age specific to customer requests (another distinguishing factor of WVR as the vast majority of U.S. beef is not dry-aged). Only the higher grades of meat can be dry-aged, as the process requires meat with a large, evenly distributed inter-muscular fat content. Because of this reality, dry-aged beef is seldom available outside of steak restaurants and upscale butcher shops.
