In 2007, we purchased a raw, undeveloped 62 acre tract of land in Round Top, TX with rolling terrain, small ponds, majestic live oaks and lots of “potential” – a blank canvas for dreams and family memories. We then invested the necessary time, money and hard work to enable our dreams to become reality. We started with no intent of being in the cattle business, but as time passed and life changed, we were left with no choice but to give it a try…and so we went for it with the best breed on the planet – “it it’s worth doing…it’s worth doing right”. The learning curve was steep (and still is), but the more we learn – the more we believe in what we are doing.

SMOKEHOUSE & MARKET

La Grange, TX

In early 2016, we embarked on an even larger challenge with the purchase an old meat market & processing facility in La Grange, TX. After significant demolition, we had another blank canvas to increase our scale of operations and attempt to reach a broader group of customers who believe in and value what we are doing at Walhalla Valley. The project was extensive and exhaustive, but we accomplished the vision we set out to achieve. Now we are tasked with turning a vision into reality. The WV Smokehouse & Market provides a platform to promote the same core principles - Quality and Service - that we set as a cornerstone when we started our cattle ranch operation in 2010.
